Pear & Burrata Cheese Salad
Ingredients
For Salad
4 cups baby arugula
2 pears, thinly sliced
8 oz burrata cheese (4 mini)
1/4 cup candied walnuts, crushed
For Dressing
1/3 cup extra virgin olive oil
1/4 cup red onion, finely minced
3 Tbsp white balsamic vinegar
2 tsp stone ground mustard
salt and pepper, to taste
Directions
Arrange arugula on a serving platter. Top with pears and burrata cheese.
In a small bowl, whisk together dressing ingredients. Season with salt and pepper, to taste.
Drizzle dressing over salad and garnish with candied walnuts.
Serve immediately.
