Pear & Burrata Cheese Salad

Ingredients

For Salad

  • 4 cups baby arugula

  • 2 pears, thinly sliced

  • 8 oz burrata cheese (4 mini)

  • 1/4 cup candied walnuts, crushed

For Dressing

  • 1/3 cup extra virgin olive oil

  • 1/4 cup red onion, finely minced

  • 3 Tbsp white balsamic vinegar

  • 2 tsp stone ground mustard

  • salt and pepper, to taste

Directions

  1. Arrange arugula on a serving platter. Top with pears and burrata cheese.

  2. In a small bowl, whisk together dressing ingredients. Season with salt and pepper, to taste.

  3. Drizzle dressing over salad and garnish with candied walnuts.

  4. Serve immediately.
