Pear & Pomegranate Salsa
Ingredients
3 pears, finely diced (about 2 cups)
1/4 cup red onion, finely chopped
1/3 cup pomegranate seeds
2 Tbps lime juice
1 Tbsp olive oil
2 Tbps cilantro or parsley, finely chopped
1 small jalapeño, seeded and finely diced (optional)
salt, to taste
pepper, to taste
Directions
In a medium bowl, combine diced pears, red onion, and pomegranate seeds.
Add lime juice and olive oil. Gently toss to coat.
Stir in chopped herb, salt, pepper, and jalapeño.
Taste and adjust season with additional salt or lime juice as needed.
Let stand for 5 to 10 minutes before serving to allow flavors to blend.
Serving Suggestions
Servie with grilled chicken, pork, or fish or as a fresh topping for tacos or crostini.
