Glacial Red Pear & Chorizo Flatbread
Ingredients
1 package puff pastry
½ cup pear preserves, mixed with 2 Tbsp water
2 cups white cheddar or gruyere, shredded
1 red pear, cored and thinly sliced
¼ cup red onion, thinly sliced
1 ½ cup chorizo, cooked and crumbled
salt and pepper, to taste
Microgreens, for garnish
Directions
Preheat oven to 425º F.
Place puff pastry on parchment lined baking sheet to defrost.
Unfold pastry dough and connect two sheets by brushing pear preserve mixture on edges, then gently press to seal together. Brush a one-inch edge around top of combined pastry.
Layer on half the cheese, then the pear and red onion slices. Top with remaining cheese, chorizo, and preserve mixture. Season with salt and pepper, to taste.
Bake for 18 to 22 minutes, or until crust is golden and cheese begins to brown.
Top with microgreens, slice, and serve.
