No Bake Pear Cheesecake

Ingredients

For Cheesecake

  • 1 ½ cups gingersnap cookies, crushed

  • 6 Tbsp unsalted butter, melted

  • 12 oz cream cheese, softened

  • 1⁄3 cup sour cream

  • ¾ cup powdered sugar

  • ½ cup heavy cream

For Topping

  • 1 red pear, medium chop

  • ¼ cup water

  • ½ cup dark brown sugar, packed

  • 1 tsp ground cinnamon

Directions

  1. Crush cookies and combine with melted butter. Press into jars and set aside.

  2. Whip cream cheese until smooth, then add sour cream, powdered sugar, and heavy cream. Stir slowly until smooth.

  3. Divide cheesecake batter into containers and smooth tops. Cover and store in fridge for at least 30 minutes, or overnight.

  4. Cook chopped pears with water, brown sugar, and cinnamon until sugar dissolves. Set aside to cool.

  5. Spoon cooled pear mixture over chilled cheesecakes and serve immediately.
