Instant Pot Oatmeal

Ingredients

Tools Needed

  • (4) one-pint jars

  • pressure cooker

For Oatmeal

  • 2 cups pears, diced

  • 1 cup steel cut oats

  • 1/4 cup dried fruit, chopped (cranberries, cherries, dates, or raisins)

  • 6 Tbsp honey

  • 8 tsp chia seeds

  • 1/2 tsp cardamom

  • 1/2 tsp ginger

  • salt, to taste

  • 3 cups water

Topping Ideas

  • coconut milk

  • Greek yogurt

  • dried fruit

  • toasted coconut flakes

  • cacao nibs

Directions

  1. In each jar, combine 1/2 cup of pears, 1/4 cup oats, 1 Tbsp dried fruit, 1 1/2 Tbsp honey, 2 tsp chia seeds, 1/8 tsp cardamom, 1/8 tsp ginger, and a pinch of salt.

  2. Pout about 3/4 cup water into each jar, leaving at least 1 inch from the top. Screw on tops and shake jars until everything is mixed together. Loosen lids slightly to allow steam to release as they cook.

  3. Prepare Instant Pot by placing wire rack in the bottom and pouring in 1 cup of water. Place jars on rack and secure top of pot. Select high pressure and set the timer for 20 minutes.

  4. When done, allow pressure to release naturally for at least 10 minutes, and then release any remaining pressure. (Consult the manufacturer’s instructions for safe use.") Open pressure cooker and carefully remove hot jars. Allow them to rest until contents stop bubbling.

  5. Remove lids using hot pads, being careful of steam, and stir each jar.

  6. Top with desired topping and serve immediately, or put lids back on to enjoy later.
