Pear & Barley Salad
Ingredients
For Salad
1 cup barley, uncooked
1/3 cup walnuts
1 cup chickpeas, cooked
2 pears, divided
1/3 cup sun-dried tomatoes, chopped
3/4 cup feta, crumbled
1/4 cup fresh parsley, chopped
1 handful baby arugula
For Dressing
3 Tbsp red onion
1/4 cup apple cider vinegar
1/3 cup olive oil
2 tsp maple syrup
1 tsp dijon mustard
1 tsp dried oregano
1/2 tsp salt
1/4 tsp papper
Directions
Cook barley according to package instructions. Drain.
In a small skillet, toast walnuts. Let cool.
In a small bowl. add minced onion and vinegar to marinate.
Chop 1 1/2 pears into cubes for the salad. Slice the remaining half pear thinly to fan and decorate the salad.
In a large bowl, add cooked barley, chickpeas, pear, sun-dried tomatoes, arugula, parsley, and feta.
In bowl is onion and vinegar, add remaining dressing ingredients. Whisk until combined.
Pour dressing over salad mixture and toss to coat.
Taste and season with additional salt and pepper, if needed.
Serve immedietly.
